Savoury Flapjack
200g(7oz) porridge oats
200g finely grated carrot
200g grated courgette
2 small onions
200g grated cheese
2 eggs beaten
1 tsp dried thyme or sage (or 2 tsps fresh)
1/2 tsp salt
1/2 tsp pepper
Heat oven to 190C/Gas 5.
Grease a baking tray. (Swiss roll size)
Mix all ingredients in a large bowl then press into tray.
Bake 25-30 minutes until set and lightly browned.
Cut into slices and eat warm with a parsley or cheese sauce or cold as part of a salad meal, lunch box or snack as we did in the recent seedling swap on Alan's allotment!
